June is the Chinese garlic harvest season, and this is basically the time of year when you can see how much garlic will be produced this year. But did you know that this is not the season to produce dehydrated garlic flakes? Do you know why? It's because the garlic is still fresh and it's not easy to peel it yet, so you have to let it dry in the ground for about another 20 days before it can be used to produce dehydrated garlic flakes.
