The production period of star anise is usually two seasons a year before the Chinese New Year and in the spring at the beginning of the year

1. Spring flowering star anise (also known as spring fruit produced in March and April) is the fruit of star anise trees that blooms in winter and bears fruit in the spring of the following year. It is usually harvested when it matures in spring. Small in size, mostly light red in color, with an incomplete fruit shape and few openings after drying. Low production, poor quality, light aroma, relatively low price, commonly used in catering, powder making, etc

2. Big red star anise (also known as autumn fruit), also known as autumn star anise, is the fruit of the second flowering of star anise trees and is harvested in autumn. The fruit is plump and plump, with large and plump grains that are brownish red or black brown in color. There are large cracks at the edges of the pods, and the seeds inside the pods can be seen. High yield, rich aroma, and superior quality, it is the top-grade star anise and widely used in cooking for stewing, boiling, marinating, and braising. It is also the main raw material for extracting fennel oil.

Quality grade: divided into sulfur free and sulfur free, fully dried and non dried. Generally, sulfur free fully dried fruits are sold online (the size and dryness of the fruit affect price changes)

3. Dried star anise: star anise left on trees or dropped on the ground after harvesting during the harvest season After processing, washing, sun drying and other processing methods, it can be exported in large quantities because the price is cheap. The fruit is not specific to a particular season, it can be found in both spring and autumn. It is the fruit that naturally dries on the tree and falls to the ground. The product has low quality but high oil content, mainly used for industrial purposes such as extracting fennel oil, and is generally not used for direct seasoning.

Star anise is mostly sun dried, and some are machine dried. If it can't be sun dried on rainy days, machines are necessary, but the color is not as good as sun dried.

 Star anise has some sulfur and some sulfur free, but the color looks better with sulfur

Does star anise contain fennel oil?

Octagonal does contain anise oil, which is the core source of its aroma. Its main component is trans anethole, with a content usually above 80%. The statement that dried star anise is used to extract fennel oil is accurate for the following reasons:

1.  Quality characteristics of dried star anise Dried star anise is the fruit of star anise that falls off naturally after air drying. Its appearance is withered, fragmented, and has poor marketability, making it unsuitable for direct sale as a cooking spice. However, its  anise oil content is not low , which is not much different from the oil content of high-quality star anise.  

2. Raw material requirements for extracting fennel oil The extraction of fennel oil mainly focuses on the oil content of the raw material, rather than its appearance integrity. Dried star anise has a low price and does not require additional drying treatment, making it a cost-effective raw material for industrial extraction of fennel oil.  

3. Comparison of oil content of different star anises - Big Red Star Anise (Autumn Star Anise): With high oil content and pure aroma, it is not only suitable for cooking and seasoning, but also a high-quality raw material for extracting fennel oil. -Spring star anise: slightly lower oil content than big red star anise, with a lighter fragrance, can be used for seasoning or for extracting small amounts of oil. -Dried star anise: Its oil content is similar to that of spring star anise. Due to its appearance defects, it is mainly used for industrial oil extraction.  

Simply put, all star anise contains fennel oil, but the use of different categories will be distinguished based on appearance quality and cost.
