originate from the same plant—Piper nigrum of the Piperaceae family. Their differences lie solely in
harvesting time and processing methods, which in turn lead to distinct variations in flavor and application scenarios.
I. Core Differences: Harvesting & Processing
1.Black Pepper - Harvest Timing: Picked when the berries are unripe (green or yellowish-green). - Processing Method: Freshly harvested berries are directly sun-dried or hot-air dried. During the drying process, the outer skin shrinks gradually and turns black, forming wrinkled black peppercorns.
2.Appearance: Plump in shape, with a dark brown to black, heavily wrinkled outer surface.
3.White Pepper - Harvest Timing: Picked when the berries are fully ripe (bright red).
4. Processing Method**: Ripe berries are first soaked in still or running water for 7–15 days to soften and decompose the outer pulp. The pulp is then removed through rubbing and washing, leaving only the white inner seeds, which are finally dried. -
5. Appearance: Slightly smaller than black peppercorns, with a smooth, grayish-white or yellowish-white surface.
